Pista Sandesh

Ingredients

  • 1 litre Cow’s Milk
  • 1/4 tsp Citric Acid
  • 1/2 cup Castor Sugar
  • 12 tbsp Pistachios (powdered)
  • 10 Pistachios (for garnish)
  1. Preparing the Paneer

    • Boil the milk in a heavy-bottomed pan.
    • Mix citric acid with a little water.
    • Gradually add this mixture to the boiling milk, stirring gently until the milk curdles.
    • Strain the paneer through a clean muslin cloth and allow it to cool.
    • Squeeze out excess water completely.
  2. Roasting the Paneer

    • Transfer the paneer to a pan.
    • Add castor sugar and roast lightly on low flame for 4–5 minutes.
    • Ensure the paneer does not change colour.
  3. Grinding & Flavouring

    • Grind the paneer–sugar mixture in a mixer without adding water until soft and light.
    • Add powdered pistachios and mix well.
  4. Shaping the Sandesh

    • Divide the mixture into small portions.
    • Shape into smooth round balls or flat discs as preferred.
  5. Garnishing & Serving

    • Garnish with whole pistachios.
    • Serve fresh or chilled.
