Marmalade Pudding
A classic steamed eggless marmalade pudding infused with citrus flavors and served with a refreshing lemony marmalade sauce. Soft, moist, and perfectly comforting.

Ingredients
For Pudding
- 2 oz Breadcrumbs
- 2 oz Flour
- 2 oz Shredded Suet (or vegetable suet)
- Grated rind of 1 Lemon
- 2 tbsp Marmalade
- 2 oz Castor Sugar
- 1/2 cup Milk
- 1/2 cup Thick Curd (yogurt) or Applesauce (egg substitute)
- 1/4 tsp Baking Powder
For Marmalade Sauce
- Peel of 1 Lemon (cut into thin strips)
- 2 tbsp Sugar
- 2 tsp Cornflour
- 2 tsp Lemon Juice
- Water as required

Mix Dry Ingredients
- Sieve flour and baking powder together.
- Add breadcrumbs, suet, grated lemon rind, and sugar.
- Mix well.

Add Wet Ingredients
- Add marmalade, milk, and curd (or applesauce).
- Mix thoroughly to form a soft batter.

Adjust Consistency
- If the mixture is too stiff, add a little extra milk to achieve a dropping consistency.

Steam the Pudding
- Transfer the mixture into a greased pudding basin.
- Cover with double-layer greased paper and tie securely.
- Steam for 2½ hours until firm and cooked through.

Prepare Marmalade Sauce
- Boil lemon peel strips in water until soft.
- Add sugar and cornflour mixed with a little water.
- Stir and simmer for 3 minutes until slightly thickened.
- Remove from heat and add lemon juice.

Serving
- Turn the pudding onto a serving dish.
- Serve hot with the prepared marmalade sauce.
