Motichoor Ladoo

Soft, melt-in-the-mouth sweet balls made from tiny golden boondis soaked in fragrant sugar syrup.

Ingredients

  1. 1/3 cup milk
  2. 1 tbsp pistachios
  3. Few drops orange colour
  4. Pure ghee for frying
  5. 1 tbsp raisins
  6. A pinch baking powder
  7. 1/2 kg sugar
  8. 1/2 kg bengal gram flour

Instructions

  1. Prepare the Batter

    • Sieve gram flour with baking powder to combine evenly.
    • Add 2 tbsp melted ghee and enough water to form a thick batter.
  2. Fry the Boondis

    • Heat ghee in a kadhai.
    • Hold a perforated spoon over the hot ghee and rub the batter on it so droplets fall into the ghee.
    • Tap the spoon gently on the rim of the kadhai to release the batter.
    • Fry the boondis until golden brown and set aside.
  3. Make the Sugar Syrup

    • Prepare a three-string consistency syrup with sugar.
    • Add orange colour to the syrup.
  4. Mix and Shape

    • Add fried boondis to the syrup.
    • Mix in raisins and chopped pistachios.
    • When slightly cool, shape into ladoos using lightly greased hands.
