Kaju Barfi

Kaju Barfi is a rich and delectable Indian sweet made from cashew nuts, khoya, and sugar. Known for its smooth texture and melt-in-the-mouth flavor, this festive delight is often decorated with edible silver foil for an elegant finish.

Ingredients

  • 150 g cashew nuts
  • 400 g sugar
  • 500 g khoya (mawa), grated
  • ½ tsp cardamom (elaichi) powder
  • Silver foil (optional, for decoration)

Instructions

  1. Prepare the Cashew Powder

    • Start by grinding the cashews to form a smooth base for the barfi.
    • Take the cashew nuts and place them in a dry grinder.
    • Grind them to a fine powder without releasing too much oil.
    • Set aside the powdered cashews for later use.
  2. Cook the Base Mixture

    • Combine khoya and sugar to create the sweet, creamy base.
    • In a heavy-bottomed pan, add grated khoya and sugar.
    • Stir continuously over medium flame until the sugar dissolves completely and the mixture turns smooth.
    • Keep stirring to prevent the mixture from sticking to the bottom or burning.
  3. Add Cashew and Flavoring

    • Incorporate the cashew powder and cardamom for richness and aroma.
    • Once the sugar has melted, add the powdered cashews to the pan.
    • Mix in elaichi (cardamom) powder for flavor.
    • Continue to stir constantly, ensuring the mixture thickens uniformly.
    • Cook until a soft lump forms and the mixture leaves the sides of the pan easily.
  4. Shape and Set the Barfi

    • Spread the mixture and shape it while it’s still warm.
    • Transfer the mixture onto a greased flat surface or tray.
    • Roll it out gently with a greased rolling pin to the desired thickness.
    • While still warm, apply silver foil (if using) for a festive touch.
    • Let it cool completely, then cut into diamond or square pieces.
  5. Serve

    • Arrange the Kaju Barfi pieces on a plate or in a decorative box.
    • Serve as a festive sweet or dessert after meals.
