Masala Papad
Masala Papad is a crispy papad topped with a fresh, tangy vegetable mix and spice blend for a quick crunchy snack.
**Ingredients
- Plain papad – 2
- Tomatoes (diced small) – 2 medium (about 1 cup)
- Cucumber (diced small) – 1/2 English cucumber (about 1/2 cup)
- Cilantro (finely chopped) – 2 tbsp
- Ginger (finely shredded, optional) – 1 tsp
- Green chili (finely chopped, optional) – 1
- Lemon – 1/2
- Oil – 2 tsp
- Salt – 1/2 tsp (for garnish)
- Black salt – 1/4 tsp
- Dry roasted cumin powder – 1/2 tsp
- Black pepper – 1/8 tsp
- Red chili powder – a pinch

**Prepare the spice mix
- Mix salt, black salt, cumin powder, black pepper and red chili powder
- Set aside

**Prepare the vegetable topping
- Mix tomatoes, cucumber, cilantro, ginger and green chili
- Squeeze lemon juice and combine
- Set aside

**Roast and shape the papad
- Lightly oil both sides of each papad
- Preheat a skillet on medium-high heat
- Roast each papad on both sides, pressing gently with a spatula
- Cook until light yellow with few brown spots (do not over-roast)
- While hot, fold each papad into quarters to form triangles
