Carrots in Foil

Ingredients:

  • 4 large carrots, peeled and cut into sticks or rounds
  • 2 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme (or herb of your choice)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Foil Packets:

    • Preheat your oven to 400°F (200°C). Tear off four large pieces of aluminum foil, each about 12 inches long.
  2. Season Carrots:

    • In a large bowl, toss the carrot sticks or rounds with melted butter, minced garlic, dried thyme, salt, and pepper until evenly coated.
  3. Assemble Foil Packets:

    • Divide the seasoned carrots evenly among the foil pieces, placing them in the center of each piece.
  4. Wrap Foil Packets:

    • Fold the sides of each foil piece over the carrots to create a packet, then fold the edges together to seal tightly.
  5. Bake:

    • Place the foil packets on a baking sheet and transfer to the preheated oven.
    • Bake for 20-25 minutes, or until the carrots are tender when pierced with a fork.
  6. Serve:

    • Carefully open the foil packets (watch out for steam) and transfer the cooked carrots to a serving dish.
    • Garnish with chopped fresh parsley, if desired, and serve hot.

Enjoy these flavorful and tender carrots cooked in foil as a side dish to accompany your favorite main course! This method helps to retain the natural sweetness and nutrients of the carrots while infusing them with delicious flavor.
