Cabbage Raita

Cabbage raita is a refreshing and creamy yogurt-based side dish made with shredded cabbage and flavored with spices. It's a perfect accompaniment to Indian meals, providing a cool contrast to spicy curries and rice dishes.

Ingredients:

  • 1 cup shredded cabbage
  • 1 cup plain yogurt (preferably whole milk yogurt)
  • 1/4 cup finely chopped cucumber
  • 1/4 cup finely chopped tomatoes (optional)
  • 1 green chili, finely chopped (optional, adjust to taste)
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon chaat masala (optional)
  • 1/4 teaspoon red chili powder (optional, for extra heat)
  • Salt to taste
  • Fresh coriander leaves, chopped, for garnish
  • Roasted cumin seeds for garnish (optional)

Instructions:

  1. Prepare the Cabbage:

    • Rinse the cabbage thoroughly under running water. Remove any tough or discolored outer leaves.
    • Shred the cabbage finely using a sharp knife or a food processor. Set aside.
  2. Prepare the Yogurt:

    • In a mixing bowl, whisk the plain yogurt until smooth and creamy. You can add a little water to adjust the consistency if needed.
  3. Assemble the Raita:

    • Add the shredded cabbage, chopped cucumber, and chopped tomatoes (if using) to the yogurt.
    • Add the finely chopped green chili (if using), roasted cumin powder, chaat masala (if using), red chili powder (if using), and salt to taste.
    • Mix all the ingredients together until well combined.
  4. Garnish:

    • Garnish the cabbage raita with freshly chopped coriander leaves and roasted cumin seeds (if using).
  5. Chill and Serve:

    • Refrigerate the cabbage raita for at least 30 minutes to allow the flavors to meld together and the raita to chill.
    • Serve chilled as a side dish with biryani, pulao, parathas, or any Indian meal.
