Mishti Achar
A sweet, tangy, lightly spiced Bengali-style pickle made with ripe olives.
Ingredients
- 1 tsp red chilli powder
- 2 tbsp mustard oil
- 2 cups sugar
- 1/2 tsp turmeric powder
- Salt to taste
- 500 g ripe olives
- 1 tsp panch phoron powder
Instructions

**Cook the olives with spices
- Add mustard oil, red chilli powder, turmeric powder, sugar, salt, and olives to a pan.
- Cook on low heat, stirring continuously.
- Continue until the mixture reaches one-thread consistency and the olives soften.

**Add panch phoron
- Once cooked, mix in the panch phoron powder thoroughly.

**Cool and store
- Allow the achar to cool completely.
- Store in a clean, dry container.
