Mishti Achar

A sweet, tangy, lightly spiced Bengali-style pickle made with ripe olives.

Ingredients

  1. 1 tsp red chilli powder
  2. 2 tbsp mustard oil
  3. 2 cups sugar
  4. 1/2 tsp turmeric powder
  5. Salt to taste
  6. 500 g ripe olives
  7. 1 tsp panch phoron powder

Instructions

  1. **Cook the olives with spices

    • Add mustard oil, red chilli powder, turmeric powder, sugar, salt, and olives to a pan.
    • Cook on low heat, stirring continuously.
    • Continue until the mixture reaches one-thread consistency and the olives soften.
  2. **Add panch phoron

    • Once cooked, mix in the panch phoron powder thoroughly.
  3. **Cool and store

    • Allow the achar to cool completely.
    • Store in a clean, dry container.
