Meetha Aam Ka Achar
Meetha Aam Ka Achar is a sweet, tangy, and mildly spiced mango pickle that balances traditional flavours with delightful sweetness.
Ingredients
- Raw mango (grated) – 1/2 kg
- Mustard seeds – 2 tsp
- Red chili pepper – 1 tsp
- Salt – 30 g
- Sugar – 1 heaped cup
- Asafoetida – small piece
- Fenugreek seeds – 1 tsp

Preparing the Spices
- Roast the asafoetida lightly and crush it to a fine powder.
- Grind mustard seeds coarsely.
- Keep fenugreek seeds ready.

Mixing the Pickle
- Combine grated raw mango, crushed asafoetida, coarsely ground mustard seeds, red chili pepper, salt, sugar, and fenugreek seeds in a clean bowl.
- Transfer the mixture into a clean, dry glass jar.

Setting the Pickle
- Keep the jar in sunlight to enhance flavour.
- Shake the jar once daily to mix well and help the pickle mature.
