Namkin Chawal
A simple, fragrant salted rice perfect for pairing with curries.
Ingredients
- 2½ cups long-grain rice
- 4 cups hot water
- 2 teaspoons ghee
- 2½ teaspoons salt
Instructions

Prepare the rice
- Wash the rice thoroughly.
- Soak it in cold water for 1 hour.
- Drain the rice using a colander.

Boil the base
- Heat a heavy saucepan with a tight-fitting lid.
- Add hot water, ghee, and salt.
- Bring the mixture to a boil.

Cook the rice
- Add the drained rice to the boiling mixture.
- Stir once and bring it quickly back to a boil.

Steam on low heat
- Reduce the heat to very low.
- Cover tightly and cook for 20–25 minutes without lifting the lid.

Release steam
- Open the lid and let the steam escape for 5 minutes.
- Gently fluff the rice with a fork without breaking the grains.

Dish out
- Use a slotted metal spoon to serve, avoiding wooden spoons that may crush the grains.

- Enjoy hot with curries or other spiced dishes.
