Namkin Chawal

A simple, fragrant salted rice perfect for pairing with curries.

Ingredients

  1. 2½ cups long-grain rice
  2. 4 cups hot water
  3. 2 teaspoons ghee
  4. 2½ teaspoons salt

Instructions

  1. Prepare the rice

    • Wash the rice thoroughly.
    • Soak it in cold water for 1 hour.
    • Drain the rice using a colander.
  2. Boil the base

    • Heat a heavy saucepan with a tight-fitting lid.
    • Add hot water, ghee, and salt.
    • Bring the mixture to a boil.
  3. Cook the rice

    • Add the drained rice to the boiling mixture.
    • Stir once and bring it quickly back to a boil.
  4. Steam on low heat

    • Reduce the heat to very low.
    • Cover tightly and cook for 20–25 minutes without lifting the lid.
  5. Release steam

    • Open the lid and let the steam escape for 5 minutes.
    • Gently fluff the rice with a fork without breaking the grains.
  6. Dish out

    • Use a slotted metal spoon to serve, avoiding wooden spoons that may crush the grains.
  7. Serve

    • Enjoy hot with curries or other spiced dishes.
