Gujarati Khichu
Gujarati Khichu is a traditional Gujarati comfort food made with rice flour and spices, known for its soft, dough-like texture and soothing flavor. It’s typically enjoyed hot with a drizzle of oil, green chutney, or pickles. Though simple, it embodies the warmth and heartiness of home-style Gujarati cooking.
Ingredients:
- 1 lb floury potatoes
- 1 tbsp tamarind pulp
- 1/4 cup water
- 2 tsp brown sugar
- 1 1/2 tbsp ghee or oil
- 1/2 tsp black mustard seeds
- 1/2 tsp ground turmeric
- 1/2 tsp cayenne or ground chili powder
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp salt
- 2 fresh green chillies, seeded and thinly sliced
- 2 tbsp desiccated coconut
Instructions:
- Soak the Grains: Wash and soak the moong dal and rice together for a few hours, then drain.
- Cook the Base: In a bowl, mix the soaked dal and rice with turmeric powder, peppercorns, 4½ cups of water, and salt.
- Pressure Cook: Pressure cook the mixture for 3–4 whistles and let it rest for 20 minutes, allowing the steam to release naturally.
- Add Flavor: Once done, open the cooker and add ghee. Mix thoroughly until smooth and creamy.
- Serve: Serve the khichu hot, topped with a drizzle of oil or ghee, and enjoy with kadhi and papad.
Tips:
- For a more authentic flavor, add a pinch of ajwain (carom seeds) while cooking.
- Garnish with freshly chopped coriander and a sprinkle of red chili powder before serving.
