Mamidikaya Pulihora

A tangy, flavourful South Indian rice dish made with raw mango and aromatic tempering.

Ingredients

  1. 2 raw mangoes
  2. 4 cups cooked rice
  3. 1 tbsp chana dal
  4. 1 tbsp urad dal
  5. 1 tsp mustard seeds
  6. 2 whole red chillies
  7. A bunch of curry leaves
  8. 1 tsp turmeric

Instructions

  1. Prepare the Mango–Rice Base

    • Peel and grate or finely chop the raw mango.
    • Mix the grated mango evenly into the cooked rice.
  2. Prepare the Tempering

    • Heat oil in a pan.
    • Add chana dal and urad dal; fry until lightly golden.
    • Add mustard seeds and let them splutter.
    • Add whole red chillies, curry leaves and turmeric powder.
  3. Combine and Finish

    • Add the rice–mango mixture to the pan.
    • Mix well until the rice is fully coated with the tempering.
    • Add salt to taste and serve hot.
