Fluffy Pancakes

Soft, airy, and delicious, these Fluffy Pancakes are a perfect breakfast treat. Lightly golden on the outside and tender on the inside, they can be enjoyed with syrup, vegan butter, or fresh fruit for a wholesome start to your day.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 2 ½ cups dairy-free milk
  • 2 tablespoons vegetable oil

Method

  1. Preheat the skillet:

    • Place a non-stick skillet or griddle on medium heat.
    • To check if it’s ready, sprinkle a few drops of water on the surface — they should gently sizzle and pop, indicating the perfect temperature.
    • Once ready, lightly grease the surface if needed and keep it warm.
  2. Combine the dry ingredients:

    • In a large mixing bowl, add all-purpose flour, baking powder, sugar, and salt.
    • Use a whisk to mix well so that the baking powder and sugar are evenly distributed throughout the flour.
    • This ensures the pancakes rise uniformly and stay fluffy.
  3. Incorporate the wet ingredients:

    • Gradually pour in the dairy-free milk and vegetable oil into the dry mixture.
    • Whisk gently until the batter just comes together. Avoid over-mixing — a few small lumps are perfectly fine.
    • Over-mixing can make the pancakes dense instead of fluffy.
    • If the batter looks too thick, let it rest for 1–2 minutes; the lumps will naturally dissolve and the texture will smooth out.
  4. Cook the pancakes:

    • Pour about ¼ cup of batter onto the preheated skillet for each pancake.
    • Allow the pancakes to cook undisturbed until small bubbles form on the surface and the edges begin to look slightly dry. This usually takes 2–3 minutes.
    • Using a flat spatula, gently flip the pancake and cook the other side for another 1–2 minutes until golden brown and cooked through.
    • Adjust the heat if the pancakes brown too quickly before the inside cooks.
  5. Serve hot:

    • Transfer the pancakes to a plate and keep them covered with a clean towel to retain their warmth while you cook the remaining batter.
