Fluffy Pancakes

Soft, airy, and delicious, these Fluffy Pancakes are perfect for breakfast and can be served with syrup, vegan butter, or fresh fruit.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • ¼ teaspoon salt
  • 2 ½ cups dairy-free milk
  • 2 tablespoons vegetable oil

Method

  1. Heat a non-stick skillet over medium heat until a drop of water gently sizzles and pops.
  2. Mix together the dry ingredients in a large bowl. Whisk in the wet ingredients, being careful not to over-mix. If there are lumps, allow the batter to rest for a minute so they can dissolve.
  3. Pour ¼ cup of batter onto the skillet for each pancake. Cook over medium heat until edges begin to dry and bubbles on top start to pop.
  4. Flip carefully and cook for another 1–2 minutes until golden brown.
  5. Serve hot with vegan butter, maple syrup, agave syrup, or fresh fruit.
