Fluffy Pancakes
Soft, airy, and delicious, these Fluffy Pancakes are a perfect breakfast treat. Lightly golden on the outside and tender on the inside, they can be enjoyed with syrup, vegan butter, or fresh fruit for a wholesome start to your day.
Ingredients
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- ¼ teaspoon salt
- 2 ½ cups dairy-free milk
- 2 tablespoons vegetable oil
Method
-
Preheat the skillet:
- Place a non-stick skillet or griddle on medium heat.
- To check if it’s ready, sprinkle a few drops of water on the surface — they should gently sizzle and pop, indicating the perfect temperature.
- Once ready, lightly grease the surface if needed and keep it warm.
-
Combine the dry ingredients:
- In a large mixing bowl, add all-purpose flour, baking powder, sugar, and salt.
- Use a whisk to mix well so that the baking powder and sugar are evenly distributed throughout the flour.
- This ensures the pancakes rise uniformly and stay fluffy.
-
Incorporate the wet ingredients:
- Gradually pour in the dairy-free milk and vegetable oil into the dry mixture.
- Whisk gently until the batter just comes together. Avoid over-mixing — a few small lumps are perfectly fine.
- Over-mixing can make the pancakes dense instead of fluffy.
- If the batter looks too thick, let it rest for 1–2 minutes; the lumps will naturally dissolve and the texture will smooth out.
-
Cook the pancakes:
- Pour about ¼ cup of batter onto the preheated skillet for each pancake.
- Allow the pancakes to cook undisturbed until small bubbles form on the surface and the edges begin to look slightly dry. This usually takes 2–3 minutes.
- Using a flat spatula, gently flip the pancake and cook the other side for another 1–2 minutes until golden brown and cooked through.
- Adjust the heat if the pancakes brown too quickly before the inside cooks.
-
Serve hot:
- Transfer the pancakes to a plate and keep them covered with a clean towel to retain their warmth while you cook the remaining batter.
- Serve the pancakes warm with your choice of vegan butter, maple syrup, agave syrup, or fresh fruits like berries, bananas, or mango slices.
Chef’s Tips
- For extra fluffiness, let the batter rest for 5–10 minutes before cooking.
- You can replace part of the all-purpose flour with whole wheat flour for added fiber.
- Add a dash of vanilla extract or a pinch of cinnamon for a richer flavor.
- To make them more indulgent, sprinkle chocolate chips or blueberries onto the batter right after pouring it onto the skillet.
