Jaggery Dosa
Jaggery Dosa is a traditional South Indian sweet dosa made with wheat flour, rice flour, jaggery, and coconut. Soft, aromatic, and mildly spiced with cardamom, it makes for a delightful snack or festive breakfast.
Ingredients:
- 2 cups wheat flour
- 1/4 cup rice flour
- 1 cup jaggery
- 1/2 coconut, grated
- 5–6 cardamoms, powdered
- Ghee, as required

Prepare Jaggery Syrup:
- Heat 2 cups of water in a vessel.
- Add jaggery and stir until it is fully dissolved.
- Remove from heat and allow it to cool slightly.

Make the Batter:
- Add wheat flour, rice flour, grated coconut, and cardamom powder to the jaggery water.
- Mix well to form a smooth, lump-free batter of medium-thick consistency.

Cook the Dosa:
- Heat a tawa or griddle and grease it lightly with ghee.
- Pour a ladleful of batter and spread it slightly thick, similar to a pancake.
- Drizzle ghee around the edges and on top.
- Cook on medium flame until light reddish in color.
- Flip gently to cook the other side.

- Serve the Jaggery Dosa warm, plain or with a dollop of ghee for extra richness.
