Jaggery Dosa

Jaggery Dosa is a traditional South Indian sweet dosa made with wheat flour, rice flour, jaggery, and coconut. Soft, aromatic, and mildly spiced with cardamom, it makes for a delightful snack or festive breakfast.

Ingredients:

  • 2 cups wheat flour
  • 1/4 cup rice flour
  • 1 cup jaggery
  • 1/2 coconut, grated
  • 5–6 cardamoms, powdered
  • Ghee, as required

Instructions:

  1. Prepare Jaggery Syrup:

    • Heat 2 cups of water in a vessel.
    • Add jaggery and stir until it is fully dissolved.
    • Remove from heat and allow it to cool slightly.
  2. Make the Batter:

    • Add wheat flour, rice flour, grated coconut, and cardamom powder to the jaggery water.
    • Mix well to form a smooth, lump-free batter of medium-thick consistency.
  3. Cook the Dosa:

    • Heat a tawa or griddle and grease it lightly with ghee.
    • Pour a ladleful of batter and spread it slightly thick, similar to a pancake.
    • Drizzle ghee around the edges and on top.
    • Cook on medium flame until light reddish in color.
    • Flip gently to cook the other side.
  4. Serve Warm:

    • Serve the Jaggery Dosa warm, plain or with a dollop of ghee for extra richness.
