Ingredients

  • 1 small cake
  • 1 tin cocktail fruits
  • 2 cups fresh cream
  • 4 cups milk
  • 4 tbsp custard powder
  • 1 cup sugar
  • ½ packet strawberry jelly
  • 1 apple
  • 1 orange
  • 1 cup grapes
  • 4–5 cherries

Instructions

  • Prepare the cake base: Slice the small cake horizontally into two even halves. Set aside for layering later.

  • Make the jelly: Prepare the strawberry jelly according to the packet instructions. Once set, cut into small cubes or keep as whole slices for layering.

  • Whip the cream: Beat the fresh cream until it becomes thick and creamy. Reserve half for garnishing the top of the pudding.

  • Prepare the fruits: Peel and chop the apple, orange, grapes, and cherries into small, bite-sized pieces. Drain the cocktail fruits and set aside.

  • Prepare the custard: In a small bowl, mix custard powder with a little cold milk to form a smooth paste. Meanwhile, boil the remaining milk in a saucepan. Add sugar and the custard paste while stirring continuously. Cook until the mixture thickens and reaches a creamy consistency. Remove from heat and let it cool slightly.

  • Assemble the first layer: Place one slice of cake in the bottom of a serving dish. Spread a layer of prepared custard evenly over the cake. Top with cocktail fruits and freshly chopped fruits.

  • Add the jelly layer: Carefully add a layer of prepared strawberry jelly over the fruits. Make sure the layer is even and covers the fruits completely.

  • Add the second cake layer: Place the second slice of cake gently on top of the jelly layer, pressing lightly to secure.

  • Top with custard and fruits: Spread the remaining custard over the top cake slice. Decorate with the remaining chopped fruits evenly across the surface.

  • Add whipped cream and final garnishing: Spread the remaining whipped cream over the top layer. Decorate the sides of the pudding with jelly slices or cubes, and garnish with cherries for a festive touch.

  • Chill and serve: Refrigerate the assembled pudding for at least 2–3 hours until set. Serve chilled for a refreshing, creamy dessert experience.

Serving Suggestion:
