Ingredients

  • 1 cup red jelly
  • 1 cup green jelly
  • 1 tin mixed fruit
  • 1 small sponge cake
  • 3 cups fresh cream
  • 1 cup milk
  • 1 tsp custard powder
  • 4 tsp sugar
  • 1 orange
  • 1 apple
  • 1 cup grapes
  • 1 slice pineapple

Instructions

  • Prepare the custard: In a small bowl, mix custard powder with a little cold milk to form a smooth paste. Boil the remaining milk in a saucepan and slowly add the custard mixture while stirring continuously. Add sugar and cook until the custard thickens. Remove from heat and allow it to cool completely.

  • Whip the cream: In a chilled bowl, beat the fresh cream until it turns frothy and light. Keep aside half for layering and half for garnishing.

  • Prepare the fruits: Chop orange, apple, grapes, and pineapple into small bite-sized pieces. Drain the tinned mixed fruit and set it aside.

  • Prepare the base: Cut the cake into small cubes. This will form the soft, spongy base layer of the pudding.

  • Prepare the jelly: Make the red and green jellies according to the packet instructions. Once set, cut them into small cubes.

  • Assemble the pudding: In a large glass bowl or pudding dish, add the cake cubes as the first layer. Top it with chopped fresh fruits, mixed fruits, a layer of custard, half of the jelly cubes, and half of the whipped cream. Mix gently to combine all ingredients without mashing the fruits.
