Asoondi

Asoondi is a traditional sweet dish, often made with milk, sugar, and cardamom, similar to kheer but with a unique regional touch.

Ingredients:

  • Milk – 1 1/2 liters
  • Saffron – A few strands
  • Almonds – 1/2 cup
  • Pistachios – 8-10
  • Sugar – 3/4 cup
  • Sunflower seeds – 2 tablespoons

Instructions:

  1. Prepare the Almonds & Nuts:

    • Soak almonds in warm water to blanch them.
    • Peel off the skin and set aside a few for garnishing.
    • Grind the remaining almonds into a smooth paste.
    • Thinly slice the reserved almonds and pistachios for decoration.
    • Wash and strain the sunflower seeds.
  2. Boil & Thicken the Milk:

    • In a heavy-bottomed pan, bring the milk to a boil while stirring continuously.
    • Reduce the heat and let it simmer until it thickens slightly and coats the back of a spoon.
  3. Mix in Flavors:

    • Dissolve the almond paste in half a cup of water or milk and stir it into the simmering milk.
    • Add sugar and saffron, mixing well until fully dissolved.
  4. Chill & Serve:

    • Allow the mixture to cool, then refrigerate until chilled.
    • Serve cold, garnished with pistachios, sunflower seeds, and sliced almonds.
