Atte Ka Seera
Atte ka Seera, also known as Atte ka Halwa, is a popular North Indian dessert made from whole wheat flour, ghee (clarified butter), sugar, and flavored with cardamom and nuts. It's a simple and delicious sweet dish often made during festivals or special occasions.
Ingredients:
- 1 cup whole wheat flour (atta)
- 1/2 cup ghee (clarified butter)
- 1 cup sugar
- 2 cups water
- 1/2 teaspoon cardamom powder
- Assorted nuts (almonds, cashews, pistachios), chopped
- Raisins (optional)
Instructions:

Prepare the Sugar Syrup:
- In a saucepan, heat water and sugar over medium heat until the sugar dissolves completely. Keep the sugar syrup warm on low heat.

Roast the Wheat Flour:
- Heat ghee in a heavy-bottomed pan or kadhai over medium-low heat. Add whole wheat flour (atta) to the ghee.

Roast the Flour:
- Roast the wheat flour in ghee, stirring continuously, until it turns golden brown in color and releases a nutty aroma. This may take about 10-15 minutes. Be careful not to burn the flour.

Add Cardamom Powder:
- Once the wheat flour is roasted, add cardamom powder to it and mix well. This will enhance the flavor of the Atte ka Seera.

Add Sugar Syrup:
- Carefully pour the warm sugar syrup into the roasted wheat flour while stirring continuously to prevent lumps from forming.

Cook the Halwa:
- Cook the mixture over medium-low heat, stirring continuously, until the wheat flour absorbs the sugar syrup and the halwa starts to thicken. This may take about 5-7 minutes.

Add Nuts and Raisins:
- Once the halwa reaches the desired consistency, add chopped nuts and raisins (if using). Mix well.

Final Touch:
- Cook for another 2-3 minutes, allowing the flavors to blend. The Atte ka Seera should have a smooth and glossy texture.

- Serve the warm Atte ka Seera garnished with more chopped nuts on top.

- You can also add a few drops of kewra water or rose water for added flavor, if desired.
