Atte Ka Seera

Atte ka Seera, also known as Atte ka Halwa, is a popular North Indian dessert made from whole wheat flour, ghee (clarified butter), sugar, and flavored with cardamom and nuts. It's a simple and delicious sweet dish often made during festivals or special occasions.

Ingredients:

  • 1 cup whole wheat flour (atta)
  • 1/2 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 cups water
  • 1/2 teaspoon cardamom powder
  • Assorted nuts (almonds, cashews, pistachios), chopped
  • Raisins (optional)

Instructions:

  1. Prepare the Sugar Syrup:

    • In a saucepan, heat water and sugar over medium heat until the sugar dissolves completely. Keep the sugar syrup warm on low heat.
  2. Roast the Wheat Flour:

    • Heat ghee in a heavy-bottomed pan or kadhai over medium-low heat. Add whole wheat flour (atta) to the ghee.
  3. Roast the Flour:

    • Roast the wheat flour in ghee, stirring continuously, until it turns golden brown in color and releases a nutty aroma. This may take about 10-15 minutes. Be careful not to burn the flour.
  4. Add Cardamom Powder:

    • Once the wheat flour is roasted, add cardamom powder to it and mix well. This will enhance the flavor of the Atte ka Seera.
  5. Add Sugar Syrup:

    • Carefully pour the warm sugar syrup into the roasted wheat flour while stirring continuously to prevent lumps from forming.
  6. Cook the Halwa:

    • Cook the mixture over medium-low heat, stirring continuously, until the wheat flour absorbs the sugar syrup and the halwa starts to thicken. This may take about 5-7 minutes.
  7. Add Nuts and Raisins:

    • Once the halwa reaches the desired consistency, add chopped nuts and raisins (if using). Mix well.
  8. Final Touch:

    • Cook for another 2-3 minutes, allowing the flavors to blend. The Atte ka Seera should have a smooth and glossy texture.
  9. Serve:

    • Serve the warm Atte ka Seera garnished with more chopped nuts on top.
  10. Optional:

    • You can also add a few drops of kewra water or rose water for added flavor, if desired.
