Corn and Onion Bake

Corn and Onion Bake is a comforting and savory casserole dish made with fresh corn, sliced onions, and a creamy milk mixture — topped with cheese and baked to golden perfection.

Ingredients

For the Bake:

  • 3 medium-sized onions
  • 6 large ears of fresh corn
  • 2 tablespoons flour
  • 1/4 tablespoon pepper powder
  • 6 cloves
  • 1 cup milk
  • 2 tablespoons butter or margarine
  • 1/4 cup grated cheese
  • Salt – to taste

Method

Step 1: Prepare the Vegetables

  1. Peel and finely slice the onions.
  2. Butter a baking dish or casserole and arrange the sliced onions evenly at the bottom.
  3. Husk the corn and remove the kernels from the cobs using a sharp knife.

Step 2: Mix the Corn Filling

  1. In a bowl, combine the corn kernels with flour, salt, pepper, and cloves.
  2. Add the milk and mix well to form a smooth, seasoned mixture.

Step 3: Assemble the Dish

  1. Pour the corn mixture evenly over the sliced onions in the prepared baking dish.
  2. Dot the top with small pieces of butter or margarine.
  3. Sprinkle grated cheese evenly over the surface.

Step 4: Bake

  1. Preheat the oven to 350°F (175°C).
  2. Place the baking dish in the oven and bake for about 50 minutes, or until the top is golden and the bake is set.
