Chick Peas Fondue

Chickpeas fondue is a delicious and hearty dish that combines the creaminess of melted cheese with the nuttiness of chickpeas.

Ingredients:

  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 cups shredded cheese (Gruyère, Emmental, or Swiss cheese)
  • 1 cup vegetable broth or water
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • Bread cubes, steamed vegetables, or roasted potatoes for dipping

Instructions:

  1. Prepare the Chickpeas:

    • In a large skillet, heat the olive oil over medium heat.
    • Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
    • Add the drained and rinsed chickpeas to the skillet.
    • Sprinkle the dried thyme, dried rosemary, salt, and pepper over the chickpeas.
    • Cook the chickpeas for 5-7 minutes, stirring occasionally, until they are heated through and slightly browned. Remove from heat and set aside.
  2. Prepare the Cheese Sauce:

    • In a medium saucepan, heat the vegetable broth or water over medium heat.
    • In a small bowl, whisk together the all-purpose flour and lemon juice until smooth.
    • Gradually whisk the flour mixture into the heated vegetable broth until smooth and thickened, about 2-3 minutes.
    • Reduce the heat to low and gradually add the shredded cheese to the sauce, stirring continuously until the cheese is melted and the sauce is smooth and creamy.
  3. Combine the Chickpeas and Cheese Sauce:

    • Pour the melted cheese sauce over the cooked chickpeas in the skillet.
    • Gently stir to combine until the chickpeas are evenly coated with the cheese sauce.
    • Cook for an additional 2-3 minutes over low heat, stirring occasionally, until the fondue is heated through.
  4. Serve:

    • Transfer the chickpeas fondue to a fondue pot or serving dish.
    • Serve immediately with bread cubes, steamed vegetables, or roasted potatoes for dipping.
