Lehsuni Tikki
A flavorful North Indian snack made of mashed potatoes stuffed with a garlicky, cheesy filling and deep-fried to golden perfection.
Ingredients
- 6 medium-sized potatoes
- 1 medium onion, finely chopped
- 4–6 garlic flakes, finely chopped
- ¼ cup grated cottage cheese (paneer)
- 6–8 cashew nuts, crushed
- ¼ cup coriander leaves, finely chopped
- ½ tbsp red chilli powder
- Salt to taste
- Oil for deep frying

Prepare the Potato Base
- Wash, boil, and cool the potatoes.
- Peel and mash them thoroughly until smooth.
- Add salt to taste and knead the mashed potatoes into a soft, smooth dough.
- Divide the dough into 10–12 equal portions.

Prepare the Filling
- Finely chop the onion, garlic, and coriander leaves.
- Crush the cashew nuts.
- In a bowl, mix the chopped onion, garlic, coriander, crushed cashews, red chilli powder, salt, and grated cottage cheese.
- Divide this mixture into 10–12 equal portions.

Shape the Tikkis
- Flatten one portion of mashed potato on your palm.
- Place one portion of the filling in the center and gently seal it.
- Roll and shape into round tikkis about 2 inches in diameter and ½ inch thick.

Fry the Tikkis
- Heat oil in a kadai for deep frying.
- Gently slide in the tikkis and fry them on medium flame until golden brown and crisp.
- Remove and drain excess oil on a kitchen towel or absorbent paper.

Serve
- Serve hot with tomato ketchup or mint chutney for a delicious snack or starter.
