Jahni Poi Rai
Jahni Poi Rai is a traditional Odia vegetable curry made with ridge gourd and a flavorful mustard-based masala. This simple yet aromatic dish pairs wonderfully with steamed rice or roti, making it a wholesome everyday meal.
Ingredients:
- 1/2 kg ridge gourd
- 1 tablespoon mustard seeds
- 1 teaspoon cumin seeds
- 5–6 garlic cloves
- 1 tomato, chopped
- 1 onion, chopped
- 1/2 teaspoon red chilli powder
- 1 tablespoon refined oil
- Salt to taste

Prepare the Masala Paste:
- Grind mustard seeds, cumin seeds, and garlic cloves with a little water to make a smooth paste.

Prepare the Ridge Gourd:
- Wash and peel the outer skin of the ridge gourd.
- Cut into small bite-sized pieces.

Cook the Onion:
- Heat oil in a frying pan.
- Add chopped onion and fry until golden brown.

Add Ridge Gourd and Masala:
- Add the ridge gourd pieces and stir well.
- Mix in the masala paste, chopped tomato, red chilli powder, and salt.

Simmer the Curry:
- Cover and cook on low flame until the ridge gourd becomes soft and blends well with the masala.

Serve Hot:
- Serve Jahni Poi Rai hot with steamed rice or roti.
