Jahni Poi Rai

Jahni Poi Rai is a traditional Odia vegetable curry made with ridge gourd and a flavorful mustard-based masala. This simple yet aromatic dish pairs wonderfully with steamed rice or roti, making it a wholesome everyday meal.

Ingredients:

  • 1/2 kg ridge gourd
  • 1 tablespoon mustard seeds
  • 1 teaspoon cumin seeds
  • 5–6 garlic cloves
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1/2 teaspoon red chilli powder
  • 1 tablespoon refined oil
  • Salt to taste

Instructions:

  1. Prepare the Masala Paste:

    • Grind mustard seeds, cumin seeds, and garlic cloves with a little water to make a smooth paste.
  2. Prepare the Ridge Gourd:

    • Wash and peel the outer skin of the ridge gourd.
    • Cut into small bite-sized pieces.
  3. Cook the Onion:

    • Heat oil in a frying pan.
    • Add chopped onion and fry until golden brown.
  4. Add Ridge Gourd and Masala:

    • Add the ridge gourd pieces and stir well.
    • Mix in the masala paste, chopped tomato, red chilli powder, and salt.
  5. Simmer the Curry:

    • Cover and cook on low flame until the ridge gourd becomes soft and blends well with the masala.
  6. Serve Hot:

    • Serve Jahni Poi Rai hot with steamed rice or roti.
