Jahni Poi Rai

Ingredients

  • 1/2 kg ridge gourd
  • 1 tbsp mustard seeds
  • 1 tsp cumin seeds
  • 5–6 garlic cloves
  • 1 tomato, chopped
  • 1 onion, chopped
  • 1/2 tsp red chilli powder
  • 1 tbsp refined oil
  • Salt to taste

Method

  1. Grind mustard seeds, cumin seeds, and garlic cloves with a little water to make a smooth masala paste.
  2. Wash and peel the outer skin of the ridge gourd. Cut into small pieces.
  3. Heat oil in a frying pan and fry chopped onion until golden brown.
  4. Add the ridge gourd pieces and stir well.
  5. Add the masala paste, chopped tomato, chilli powder, and salt. Mix thoroughly.
  6. Cover and cook on low flame until the vegetable turns soft and well blended with the masala.
  7. Serve hot with rice or roti.
