Jahni Poi Rai
Ingredients
- 1/2 kg ridge gourd
- 1 tbsp mustard seeds
- 1 tsp cumin seeds
- 5–6 garlic cloves
- 1 tomato, chopped
- 1 onion, chopped
- 1/2 tsp red chilli powder
- 1 tbsp refined oil
- Salt to taste
Method
- Grind mustard seeds, cumin seeds, and garlic cloves with a little water to make a smooth masala paste.
- Wash and peel the outer skin of the ridge gourd. Cut into small pieces.
- Heat oil in a frying pan and fry chopped onion until golden brown.
- Add the ridge gourd pieces and stir well.
- Add the masala paste, chopped tomato, chilli powder, and salt. Mix thoroughly.
- Cover and cook on low flame until the vegetable turns soft and well blended with the masala.
- Serve hot with rice or roti.
