Ingredients

  • 2 long cucumbers
  • 2 bunches spring onions, finely chopped
  • 2 tomatoes, chopped
  • ½ cup diced cauliflower
  • ½ cup grated cheese
  • 2 tbsp chopped coriander leaves
  • 1 tbsp butter or ghee
  • Salt to taste
  • Chilli powder to taste

Method

  1. Prepare the cucumbers:

    • Wash the cucumbers thoroughly and slice them (without peeling) into ½-inch thick round pieces.
    • Arrange the slices on a flat plate and set aside.
  2. Sauté the vegetables:

    • Heat butter or ghee in a frying pan.
    • Add the finely chopped spring onions, tomatoes, and diced cauliflower.
    • Sauté for about 5 minutes on medium flame until the vegetables soften slightly and release their aroma.
  3. Assemble the dish:

    • Arrange the cucumber slices in a shallow baking dish or ovenproof pan.
    • Spoon the sautéed vegetable mixture evenly over each slice.
    • Sprinkle a little salt, chilli powder, and grated cheese on top of each prepared cucumber.
  4. Grill or bake:

    • Place the dish under a grill or in a preheated moderate oven.
    • Grill until the cheese melts and the cucumbers soften slightly at the edges.
    • Avoid overcooking to retain the cucumbers’ crispness.
  5. Garnish and serve:

    • Remove from heat and sprinkle freshly chopped coriander leaves over the top.
    • Serve hot as an appetizer or side dish with any meal.
