Grilled Savoury Cucumbers
Grilled Savoury Cucumbers are a light, refreshing, and flavorful dish where tender cucumber slices are topped with sautéed vegetables and cheese, then grilled or baked to perfection. Ideal as a healthy appetizer or side dish, this recipe brings together the crunch of cucumbers and the richness of melted cheese for a delightful bite.
Ingredients
- 2 long cucumbers
- 2 bunches spring onions, finely chopped
- 2 tomatoes, chopped
- ½ cup diced cauliflower
- ½ cup grated cheese
- 2 tbsp chopped coriander leaves
- 1 tbsp butter or ghee
- Salt to taste
- Chilli powder to taste

Prepare the cucumbers:
- Wash the cucumbers thoroughly and slice them (without peeling) into ½-inch thick round pieces.
- Arrange the slices on a flat plate and set aside.

Sauté the vegetables:
- Heat butter or ghee in a frying pan.
- Add the finely chopped spring onions, tomatoes, and diced cauliflower.
- Sauté for about 5 minutes on medium flame until the vegetables soften slightly and release their aroma.

Assemble the dish:
- Arrange the cucumber slices in a shallow baking dish or ovenproof pan.
- Spoon the sautéed vegetable mixture evenly over each slice.
- Sprinkle a little salt, chilli powder, and grated cheese on top of each prepared cucumber.

Grill or bake:
- Place the dish under a grill or in a preheated moderate oven.
- Grill until the cheese melts and the cucumbers soften slightly at the edges.
- Avoid overcooking to retain the cucumbers’ crispness.

Garnish and serve:
- Remove from heat and sprinkle freshly chopped coriander leaves over the top.
- Serve hot as an appetizer or side dish with any meal.
