Masalaydar Bhindi
Masalaydar Bhindi is a spicy, tangy, and flavorful okra stir-fry made with simple Indian spices.
Ingredients
- Ladyfingers (bhindi) 500 g
- Oil 4 tbsp
- Cumin seeds 1/2 tsp
- Onions sliced 2 large
- Green chillies slit 3–4
- Red chilli powder 1 tsp
- Coriander powder 1 tbsp
- Turmeric powder 1/2 tsp
- Salt to taste
- Dried mango powder (amchur) 2 tsp

**Preparing the Bhindi
- Wash the bhindi and pat them completely dry or wipe each with a damp cloth.
- Trim both ends.
- Cut them into 2-inch pieces.
- Slit each piece lengthwise without cutting it into two.

**Sautéing the Base
- Heat oil in a kadai.
- Add cumin seeds and let them change colour.
- Add sliced onions and sauté until light golden.
- Add slit green chillies and sauté for half a minute.

**Cooking the Bhindi
- Add the bhindi to the kadai.
- Sprinkle red chilli powder, coriander powder, and turmeric powder.
- Mix well so the spices coat the bhindi evenly.
- Cover and cook on low heat, stirring occasionally.

**Finishing
- Add salt and amchur powder.
- When the bhindi is almost cooked, increase heat.
- Cook for 2 minutes to enhance flavor and texture.
