Ingredients
- Boiled rice – 2 cups
- Lemon juice – 1/3 cup
- Oil – 6 tbsp
- Black mustard seeds – 1/2 tsp
- Curry leaves – a few
- Green chilies – as desired
- Salt – to taste
- Turmeric powder – 1/4 tsp
- Peanuts – 1/4 cup

Prepare the Tempering
- Heat oil in a pan.
- Add black mustard seeds and allow them to splutter for a few seconds.

Add Flavor and Crunch
- Add turmeric powder and peanuts.
- Fry the peanuts until they turn golden brown and crisp.

Add Aromatics
- Add green chilies, curry leaves, and salt.
- Fry the mixture for about 2 minutes until fragrant.

Incorporate Lemon Juice
- Remove the pan from the flame.
- Add lemon juice and mix well to blend the flavors.

- Pour the prepared tempering over the boiled rice.
- Mix gently so that every grain is evenly coated with the lemon mixture.
