Lemon Rice 2

A tangy and aromatic South Indian dish made with rice, lemon juice, and tempered spices for a refreshing and flavorful meal.

Ingredients

  1. Rice – 1 cup
  2. Oil – 2 tbsp
  3. Mustard seeds – 1 tsp
  4. Urad dal – 1 tsp
  5. Chana dal – 1 tsp
  6. Cashews – a handful
  7. Raisins – a handful
  8. Turmeric – a pinch
  9. Mixed vegetables – 1 cup (optional)
  10. Lemon – 1

Instructions

  1. Cook the Rice

    • Wash the rice and cook until soft but not mushy.
    • Spread on a plate to cool slightly so the grains remain separate.
  2. Prepare the Tempering

    • Heat oil in a pan.
    • Add mustard seeds and let them splutter.
    • Add urad dal and chana dal; sauté until golden brown.
    • Add cashews and raisins; fry until cashews are golden and raisins puff up.
    • Add a pinch of turmeric and stir well.
    • If using vegetables, add them now and sauté until cooked.
  3. Mix and Flavor

    • Add the cooked rice to the pan and mix gently to combine.
    • Squeeze the lemon and pour the juice over the rice.
    • Stir lightly so the lemon flavor spreads evenly without breaking the grains.
  4. Serve

    • Serve hot with papad or curd for a light and zesty meal.
