Jeera Rice
Ingredients
- 1 cup basmati rice
- 2 tsp jeera (cumin seeds)
- 2 tbsp cashewnuts
- 3 whole peppercorns
- 2 bay leaves
- 3 cloves
- 2 cinnamon sticks
- 1 onion, sliced
- 2 tbsp ghee
- Salt to taste
Method
- Wash the rice and soak in water for half an hour.
- Heat ghee in a heavy saucepan, add cashewnuts, and fry until golden brown. Remove and keep aside.
- In the same ghee, add onions, bay leaves, cloves, cinnamon sticks, cumin seeds, and peppercorns. Fry for a while.
- Add rice, salt, and water. Stir well, cover with a lid, and simmer.
- Cook until the rice is done.
- Garnish with fried cashewnuts and serve hot with any spicy curry or raita.
