Jeera Rice

Ingredients

  • 1 cup basmati rice
  • 2 tsp jeera (cumin seeds)
  • 2 tbsp cashewnuts
  • 3 whole peppercorns
  • 2 bay leaves
  • 3 cloves
  • 2 cinnamon sticks
  • 1 onion, sliced
  • 2 tbsp ghee
  • Salt to taste

Method

  1. Wash the rice and soak in water for half an hour.
  2. Heat ghee in a heavy saucepan, add cashewnuts, and fry until golden brown. Remove and keep aside.
  3. In the same ghee, add onions, bay leaves, cloves, cinnamon sticks, cumin seeds, and peppercorns. Fry for a while.
  4. Add rice, salt, and water. Stir well, cover with a lid, and simmer.
  5. Cook until the rice is done.
  6. Garnish with fried cashewnuts and serve hot with any spicy curry or raita.
