Mango Jelly
A smooth, glossy fruit jelly made from semi-ripe mangoes.
Ingredients
- 1/2 kg ripe but firm mango slices
- 3 cups sugar
- 1 3/4 cups water
- Juice of one lemon

Cook the mango
- Add mango slices and water to a deep pan.
- Cook until the slices become completely tender.

Prepare the pulp
- Remove from heat.
- Pass the cooked mixture through a gravy strainer to extract smooth pulp.

Make the jelly
- Add sugar and lemon juice to the mango pulp.
- Cook on high heat, stirring continuously.
- Continue cooking until the mixture sets when tested on a plate.

Store the jelly
- Let it cool slightly.
- Pour into sterilized jars and seal.
