Mango Jelly

A smooth, glossy fruit jelly made from semi-ripe mangoes.

Ingredients

  1. 1/2 kg ripe but firm mango slices
  2. 3 cups sugar
  3. 1 3/4 cups water
  4. Juice of one lemon

Instructions

  1. Cook the mango

    • Add mango slices and water to a deep pan.
    • Cook until the slices become completely tender.
  2. Prepare the pulp

    • Remove from heat.
    • Pass the cooked mixture through a gravy strainer to extract smooth pulp.
  3. Make the jelly

    • Add sugar and lemon juice to the mango pulp.
    • Cook on high heat, stirring continuously.
    • Continue cooking until the mixture sets when tested on a plate.
  4. Store the jelly

    • Let it cool slightly.
    • Pour into sterilized jars and seal.
