Carrot Jam
Carrot jam is a delightful and unique spread that is sweet, tangy, and bursting with flavor.
Ingredients:
- 1 lb (about 450g) carrots, peeled and grated
- 1 cup granulated sugar
- Juice of 1 lemon
- Zest of 1 lemon (optional)
- 1/2 teaspoon ground cinnamon (optional)
- 1/4 teaspoon ground ginger (optional)
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 teaspoon salt
- 1/2 cup water
Instructions:
-
Prepare the Carrots:
- Peel the carrots and grate them using a box grater or food processor. Set aside.
-
Cook the Carrots:
- In a large, heavy-bottomed saucepan, combine the grated carrots, sugar, lemon juice, lemon zest (if using), ground cinnamon, ground ginger, ground nutmeg, salt, and water.
- Stir well to combine.
-
Cook the Mixture:
- Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally.
-
Simmer:
- Once the mixture starts simmering, reduce the heat to low and let it cook gently, stirring occasionally, for about 30-40 minutes or until the carrots are soft and the mixture has thickened to a jam-like consistency.
-
Test for Doneness:
- To check if the jam is done, place a small amount on a chilled plate. If it sets and holds its shape, it's ready. If not, continue cooking for a few more minutes and test again.
-
Cool and Store:
- Once the jam reaches the desired consistency, remove the saucepan from the heat and let the jam cool completely.
-
Transfer to Jars:
- Once cooled, spoon the carrot jam into clean, sterilized jars.
-
Seal the Jars:
- Seal the jars tightly with lids and store them in the refrigerator.
-
Serve:
- Enjoy the carrot jam on toast, biscuits, scones, or as a filling for pastries. It also pairs well with cheese or as a glaze for meats.
-
Optional:
- You can adjust the sweetness and spices according to your taste preferences. Feel free to omit the spices or adjust their quantities based on your preference.
-
Note:
- Carrot jam can be stored in the refrigerator for up to several weeks. Make sure to use clean, sterilized jars and lids to prolong its shelf life.
