Hummus

Hummus is a creamy and nutritious Middle Eastern dip made from chickpeas (kabul channa), sesame, lemon juice, and olive oil. Smooth, rich, and full of flavor, it is traditionally served with pita bread, but it also pairs well with vegetable sticks, crackers, or as a spread in wraps and sandwiches.

Ingredients:

  • 1/2 kg Kabul channa (chickpeas)
  • 1 cup olive oil
  • Lemon juice (to taste)
  • 1 tablespoon sesame seeds
  • Salt to taste

Instructions:

  1. Soak and Cook Chickpeas:

    • Soak the chickpeas overnight in plenty of water.
    • The next day, boil them in fresh water until soft and well cooked. Drain well.
  2. Make the Paste:

    • Grind the chickpeas into a smooth paste, blending in olive oil, lemon juice, salt, and sesame seeds.
    • Adjust seasoning and lemon juice to taste.
  3. Serve and Garnish:

    • Spread the hummus on a flat platter.
    • Sprinkle with extra sesame seeds and drizzle with 1 tablespoon of olive oil.
  4. Chill and Enjoy:

    • Chill before serving.
    • Serve with warm pita bread, flatbreads, or as a dip with fresh vegetables.
