Jaipur Ki Gajak

Ingredients

  • 1/4 cup cashew nuts (halved)
  • 1/2 cup sesame seeds
  • 200 gms sugar
  • 2 tbsp pure ghee

Method

  1. Grease a tray with a little ghee and keep aside.
  2. Roast sesame seeds over low heat until lightly browned.
  3. Roast cashew nuts separately until golden brown.
  4. In a pan, combine sugar, remaining ghee, and 2 tbsp water.
  5. Cook over medium heat, stirring, until it forms a thick syrup.
  6. Remove from heat and stir in roasted sesame seeds and cashew nuts.
  7. Mix quickly and spread the mixture onto the greased tray.
  8. Level the surface with a spatula.
  9. While still warm, cut into desired shapes and sizes.
  10. Allow to cool completely, then separate the pieces.
  11. Serve or store in an airtight container.
