Jaipur Ki Gajak

Jaipur Ki Gajak is a traditional Rajasthani sweet delicacy made with sesame seeds, sugar, and dry fruits. It is a crunchy and nutty treat that is especially enjoyed during winters and festive occasions like Makar Sankranti.

Ingredients:

  • 1/4 cup cashew nuts (halved)
  • 1/2 cup sesame seeds
  • 200 g sugar
  • 2 tablespoons pure ghee

Instructions:

  1. Prepare the Tray:

    • Grease a tray with a little ghee and keep aside for setting the gajak.
  2. Roast the Ingredients:

    • Roast sesame seeds on low heat until lightly browned. Remove and set aside.
    • Roast cashew nuts separately until golden brown. Keep aside.
  3. Make the Sugar Syrup:

    • In a pan, combine sugar, the remaining ghee, and 2 tablespoons of water.
    • Cook over medium heat, stirring, until the mixture forms a thick syrup.
  4. Combine and Mix:

    • Remove the syrup from heat.
    • Quickly stir in the roasted sesame seeds and cashew nuts. Mix well.
  5. Set the Mixture:

    • Spread the mixture evenly onto the greased tray.
    • Level the surface with a spatula while still warm.
  6. Cut and Cool:

    • While the mixture is warm, cut it into desired shapes and sizes.
    • Allow it to cool completely, then separate the pieces.
  7. Serve or Store:

    • Serve Jaipur Ki Gajak fresh or store it in an airtight container for later.
