Bread Barfi

Bread Barfi is a delicious and easy-to-make Indian sweet made with bread, milk, sugar, and cardamom. It's a great way to use up leftover bread and create a delightful dessert.

Ingredients:

  • 6 slices of white bread (stale bread works best)
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • Chopped nuts for garnish (optional)

Instructions:

  1. Prepare the Bread:

    • Remove the crust from the bread slices and discard. Tear the bread into small pieces or crumble it into breadcrumbs.
  2. Make Bread Paste:

    • In a blender or food processor, add the bread pieces along with milk. Blend until you get a smooth paste without any lumps. Set aside.
  3. Cook Bread Mixture:

    • Heat ghee in a non-stick pan or heavy-bottomed saucepan over medium heat. Once the ghee is hot, add the bread paste to the pan.
    • Cook the mixture, stirring continuously, until it thickens and starts to leave the sides of the pan. This may take about 10-15 minutes.
  4. Add Sugar and Cardamom:

    • Once the mixture thickens, add sugar and cardamom powder to the pan. Mix well until the sugar is dissolved completely.
  5. Continue Cooking:

    • Cook the mixture further, stirring continuously, until it thickens and forms a dough-like consistency. It should start to leave the sides of the pan.
  6. Shape and Set:

    • Transfer the mixture to a greased plate or tray. Using a spatula or the back of a spoon, spread and flatten the mixture evenly to form a smooth layer.
  7. Garnish:

    • Sprinkle chopped nuts (such as almonds, pistachios, or cashews) on top of the barfi mixture. Press them gently into the surface.
  8. Set and Cool:

    • Allow the Bread Barfi to cool and set at room temperature for about 1-2 hours. You can also refrigerate it for faster setting.
  9. Cut into Pieces:

    • Once the barfi is set, use a sharp knife to cut it into square or diamond-shaped pieces.
  10. Serve:

    • Serve the delicious Bread Barfi as a sweet treat or dessert. Store any leftover barfi in an airtight container in the refrigerator for up to 4-5 days.
