Beetroot Halwa

Beetroot Halwa is a delicious and colorful Indian dessert made with grated beetroot, milk, sugar, and flavored with cardamom and nuts.

Ingredients:

  • 2 cups grated beetroot (about 2 medium-sized beetroots)
  • 2 cups whole milk
  • 1/2 cup sugar (adjust to taste)
  • 2 tablespoons ghee (clarified butter)
  • 4-5 green cardamom pods, crushed (seeds only)
  • 2 tablespoons chopped nuts (such as almonds, cashews, or pistachios)
  • A pinch of saffron strands (optional)
  • 1 tablespoon raisins (optional)
  • 1 tablespoon desiccated coconut (optional)
  • A few strands of edible silver foil (varak), for garnish (optional)

Instructions:

  1. Prepare Beetroot:

    • Peel the beetroots and grate them using a box grater or a food processor. Set aside.
  2. Cook Beetroot:

    • Heat ghee in a heavy-bottomed pan or kadhai over medium heat. Add the grated beetroot and sauté for a few minutes until it starts to soften.
  3. Simmer with Milk:

    • Pour the milk into the pan with the grated beetroot. Stir well to combine.
    • Simmer the mixture over medium-low heat, stirring occasionally, until the beetroot is cooked and the milk has reduced to about half its original quantity. This may take about 20-25 minutes.
  4. Add Sugar:

    • Once the beetroot is cooked and the milk has thickened, add sugar to the pan. Stir well until the sugar is dissolved.
  5. Flavor with Cardamom:

    • Crush the cardamom pods and add the seeds to the halwa for flavor. Mix well.
  6. Add Nuts and Saffron:

    • Add chopped nuts, saffron strands (optional), and raisins (optional) to the halwa. Stir well to distribute evenly.
    • You can also add desiccated coconut for additional flavor and texture if desired.
  7. Cook Until Thickened:

    • Continue to cook the halwa, stirring frequently, until it reaches a thick and pudding-like consistency. The mixture should leave the sides of the pan.
  8. Garnish and Serve:

    • Once the halwa is cooked to the desired consistency, remove it from heat.
    • Garnish the Beetroot Halwa with chopped nuts and a few strands of edible silver foil (varak) for a decorative touch, if desired.
  9. Serve Warm or Chilled:

    • Serve the Beetroot Halwa warm or chilled, as per your preference. Enjoy this delicious and colorful dessert as a sweet treat after meals or during festive occasions.
