Creamed Peas and Corn
Creamed Peas and Corn is a simple, creamy side dish made by simmering sweet corn and green peas in light cream and butter, delicately seasoned with ground coriander and black pepper.
Ingredients
For the Dish:
- 300 g peas
- 300 g whole kernel corn
- 1/4 cup light cream
- 2 tablespoons butter or margarine
- 1 tablespoon ground coriander
- Salt – to taste
- Black pepper – to taste
Method
Step 1: Boil the Peas
- In a medium-sized pan, bring 3/4 cup water and 1½ teaspoons salt to a boil.
- Add the peas and let the water return to a boil.
- Reduce the heat, cover, and simmer for 15 minutes or until peas are nearly tender.
Step 2: Add Corn and Cook Together
- Add the whole kernel corn to the peas.
- Simmer for an additional 3 minutes, or until both peas and corn are fully cooked and tender.
Step 3: Drain and Combine
- Drain the cooked vegetables well.
- Return to the pan and add light cream, butter or margarine, ground coriander, and the remaining salt and pepper.
- Mix well and heat gently until everything is warmed through and creamy.
Serving Suggestion
- Serve hot as a side dish with baked dishes, grilled vegetables, or bread rolls.
- Great for holiday meals, potlucks, or light weekday dinners.
