Moong Dal Chakli

A crispy, festive snack made with rice flour and moong dal paste, perfect for tea-time or celebrations.

Ingredients

  1. 2 cups rice flour
  2. 1/2 cup moong dal paste
  3. 2 tsp oil
  4. 1/4 tsp turmeric
  5. 1/2 tsp carom seeds (ajwain) or cumin seeds
  6. 1 tsp red chili powder (optional)
  7. Salt to taste
  8. Oil for frying
  9. Water as required

Instructions

  1. Prepare the Moong Dal Paste

    • Cook the moong dal until soft and mash or grind it into a smooth paste.
  2. Make the Dough

    • Add rice flour, moong dal paste, turmeric, salt, chili powder, and ajwain or cumin seeds to a mixing bowl.
    • Heat 2 tsp oil and pour the sizzling hot oil over the mixture.
    • Add water gradually and knead into a stiff dough using hands (not a processor).
  3. Shape and Fry the Chakli

    • Take lemon-sized portions of dough and fill a chakli mould or icing bag with a star nozzle.
    • Heat oil for frying and test by dropping a tiny dough piece—if it rises in 3 seconds, oil is ready.
    • Press the dough into spirals (chaklis) and deep fry until golden brown.
    • Allow the chaklis to cool completely before storing.
