Fresh Tomato Sauce
Fresh Tomato Sauce is a tangy and mildly spiced homemade sauce made from ripe tomatoes, aromatic spices, and a hint of sweetness. Perfect as a base for pasta, pizza, or as a condiment.
Ingredients
- 1 1/2 kgs tomatoes
- 1/4 tsp red chilli powder
- 1 cup sugar
- 4 cloves
- 1 small onion
- 1 small piece cinnamon
- 30 g ginger (about 2 tsp chopped)
- 6 cloves garlic
- 1/4 cup vinegar
- 2 tsp salt

Prepare the ingredients: Wash and dry the tomatoes thoroughly. Chop them roughly into medium-sized pieces. Peel and chop the onion, garlic, and ginger. Coarsely crush the cloves and cinnamon.

Cook the base: In a deep pan (degchi), add the chopped tomatoes, onion, garlic, and ginger. Cook over gentle heat, stirring occasionally, until the tomatoes become soft and tender.

Add spices and sugar: Sprinkle in the crushed cloves and cinnamon, sugar, and red chilli powder. Mix well and continue cooking until the mixture thickens slightly and the flavors blend.

Blend and strain: Remove from heat and allow it to cool slightly. Strain the mixture through a fine sieve or blender to achieve a smooth, thick tomato sauce.

Add vinegar and season: Stir in vinegar and salt to taste. Mix thoroughly to balance the tanginess and sweetness.

Store or serve: Use immediately as a base for sauces, pasta, or pizza, or store in an airtight container in the refrigerator for up to a week.
Serving Suggestion:
Serve with pasta, sandwiches, pizza, or as a dip for fried snacks. Can also be used as a base for soups and gravies.
