Fresh Tomato Sauce
A tangy and mildly spiced homemade tomato sauce, perfect as a base or accompaniment.
Ingredients
- 1 1/2 kgs tomatoes
- 1/4 tsp red chilli powder
- 1 cup sugar
- 4 cloves
- 1 small onion
- 1 small piece cinnamon
- 30 g ginger (2 tsp chopped)
- 6 cloves garlic
- 1/4 cup vinegar
- 2 tsp salt
Method
- Wash, dry, and chop the tomatoes.
- Peel and chop the onion, garlic, and ginger. Coarsely crush the spices.
- Place tomatoes, onion, garlic, and ginger in a degchi (deep pan) and cook over gentle heat until tender.
- Add the crushed spices, sugar, chilli powder, and cook until thick.
- Strain through a sieve and use as desired.
