Fresh Tomato Sauce

A tangy and mildly spiced homemade tomato sauce, perfect as a base or accompaniment.

Ingredients

  • 1 1/2 kgs tomatoes
  • 1/4 tsp red chilli powder
  • 1 cup sugar
  • 4 cloves
  • 1 small onion
  • 1 small piece cinnamon
  • 30 g ginger (2 tsp chopped)
  • 6 cloves garlic
  • 1/4 cup vinegar
  • 2 tsp salt

Method

  1. Wash, dry, and chop the tomatoes.
  2. Peel and chop the onion, garlic, and ginger. Coarsely crush the spices.
  3. Place tomatoes, onion, garlic, and ginger in a degchi (deep pan) and cook over gentle heat until tender.
  4. Add the crushed spices, sugar, chilli powder, and cook until thick.
  5. Strain through a sieve and use as desired.
