Ingredients

  • 1 1/2 kgs tomatoes
  • 1/4 tsp red chilli powder
  • 1 cup sugar
  • 4 cloves
  • 1 small onion
  • 1 small piece cinnamon
  • 30 g ginger (about 2 tsp chopped)
  • 6 cloves garlic
  • 1/4 cup vinegar
  • 2 tsp salt

Instructions

  • Prepare the ingredients: Wash and dry the tomatoes thoroughly. Chop them roughly into medium-sized pieces. Peel and chop the onion, garlic, and ginger. Coarsely crush the cloves and cinnamon.

  • Cook the base: In a deep pan (degchi), add the chopped tomatoes, onion, garlic, and ginger. Cook over gentle heat, stirring occasionally, until the tomatoes become soft and tender.

  • Add spices and sugar: Sprinkle in the crushed cloves and cinnamon, sugar, and red chilli powder. Mix well and continue cooking until the mixture thickens slightly and the flavors blend.

  • Blend and strain: Remove from heat and allow it to cool slightly. Strain the mixture through a fine sieve or blender to achieve a smooth, thick tomato sauce.

  • Add vinegar and season: Stir in vinegar and salt to taste. Mix thoroughly to balance the tanginess and sweetness.

  • Store or serve: Use immediately as a base for sauces, pasta, or pizza, or store in an airtight container in the refrigerator for up to a week.

Serving Suggestion:

Serve with pasta, sandwiches, pizza, or as a dip for fried snacks. Can also be used as a base for soups and gravies.
