Plain Lemon Pickle

Ingredients

  • 25 Lemons
  • 6 tbsp Salt
  1. Preparation

    • Wash and wipe the lemons completely dry.
    • Prick each lemon with a sharp needle at several places.
  2. Pickling Process

    • Place the pricked lemons in a clean, dry glass jar.
    • Add salt and mix well so all lemons are evenly coated.
    • Close the jar tightly.
  3. Sun Curing

    • Keep the jar in sunlight for about one month.
    • Shake the jar gently every day to ensure even curing.
    • The lemons will turn slightly golden brown as they mature.
  4. Storage & Serving

    • Once ready, store the pickle in a cool, dry place.
    • This pickle keeps well for up to two years.
    • Serve as a condiment with rice and curd.
