Plain Lemon Pickle
Ingredients
- 25 Lemons
- 6 tbsp Salt

Preparation
- Wash and wipe the lemons completely dry.
- Prick each lemon with a sharp needle at several places.

Pickling Process
- Place the pricked lemons in a clean, dry glass jar.
- Add salt and mix well so all lemons are evenly coated.
- Close the jar tightly.

Sun Curing
- Keep the jar in sunlight for about one month.
- Shake the jar gently every day to ensure even curing.
- The lemons will turn slightly golden brown as they mature.

Storage & Serving
- Once ready, store the pickle in a cool, dry place.
- This pickle keeps well for up to two years.
- Serve as a condiment with rice and curd.
