Carrot Kheer

Carrot kheer, also known as carrot payasam, is a delicious and creamy Indian dessert made with carrots, milk, sugar, and flavored with cardamom and nuts.

Ingredients:

  • 2 cups grated carrots (about 3-4 medium-sized carrots)
  • 4 cups milk
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup condensed milk (optional, for extra creaminess)
  • 4-5 green cardamom pods, crushed or powdered
  • 2 tablespoons ghee (clarified butter)
  • 10-12 cashews, chopped
  • 10-12 almonds, sliced
  • 1 tablespoon raisins
  • A pinch of saffron strands (optional, for garnish)
  • Chopped pistachios or almonds for garnish

Instructions:

  1. Prepare the Carrots:

    • Wash, peel, and grate the carrots using a grater. Set aside.
  2. Cook the Carrots:

    • Heat ghee in a heavy-bottomed pan or kadhai over medium heat. Add the grated carrots and sauté for 5-7 minutes until they turn soft and release their aroma.
  3. Add Milk:

    • Pour the milk into the pan with the cooked carrots. Stir well to combine.
  4. Simmer:

    • Bring the mixture to a gentle boil, then reduce the heat to low. Let it simmer for about 20-25 minutes, stirring occasionally, until the carrots are fully cooked and the mixture thickens slightly.
  5. Add Sweeteners and Flavorings:

    • Once the carrots are cooked and the milk has reduced, add sugar and condensed milk (if using). Stir well until the sugar is dissolved.
  6. Add Cardamom:

    • Crush the green cardamom pods and add the powdered seeds to the kheer. Mix well to infuse the flavor.
  7. Roast Nuts and Raisins:

    • In a separate small pan, heat a tablespoon of ghee. Add chopped cashews, sliced almonds, and raisins. Fry until they turn golden brown.
  8. Add Nuts and Raisins to Kheer:

    • Add the roasted nuts and raisins to the carrot kheer. Stir well to distribute evenly.
  9. Garnish:

    • Garnish the carrot kheer with chopped pistachios or almonds and a pinch of saffron strands (if using).
  10. Serve:

    • Serve the carrot kheer warm or chilled, depending on your preference. It can be enjoyed as a dessert after meals or as a sweet treat on special occasions.
  11. Storage:

    • Leftover carrot kheer can be stored in the refrigerator for up to 2-3 days. Reheat before serving, if desired.
