Olan
A traditional Kerala-style mild curry made with pumpkin, green chilies, and coconut oil, known for its subtle flavors.
Ingredients
- 1 cup red pumpkin
- 1 cup white pumpkin
- 6 green chilies
- Salt to taste
- 2 tbsp coconut oil
- 10–12 curry leaves
Method

Prepare vegetables
- Wash the pumpkins and cut them into medium-sized cubes
- Wash the green chilies and slit them lengthwise
- Keep everything ready before cooking

Cook the vegetables
- Add pumpkin cubes and slit green chilies to a pan
- Pour in 1 cup water and add salt
- Cook on medium heat, stirring occasionally, until vegetables are soft and fully cooked

Finish the dish
- Lightly mash the cooked vegetables with a ladle
- Pour in raw coconut oil and mix gently
- Add curry leaves and adjust salt if needed
- Serve hot
