A traditional Kerala-style mild curry made with pumpkin, green chilies, and coconut oil, known for its subtle flavors.

Ingredients

  1. 1 cup red pumpkin
  2. 1 cup white pumpkin
  3. 6 green chilies
  4. Salt to taste
  5. 2 tbsp coconut oil
  6. 10–12 curry leaves

Method

  1. Prepare vegetables

    • Wash the pumpkins and cut them into medium-sized cubes
    • Wash the green chilies and slit them lengthwise
    • Keep everything ready before cooking
  2. Cook the vegetables

    • Add pumpkin cubes and slit green chilies to a pan
    • Pour in 1 cup water and add salt
    • Cook on medium heat, stirring occasionally, until vegetables are soft and fully cooked
  3. Finish the dish

    • Lightly mash the cooked vegetables with a ladle
    • Pour in raw coconut oil and mix gently
    • Add curry leaves and adjust salt if needed
    • Serve hot
