Hara Chana Masala

Ingredients:

  • 4 kg hara chana (fresh green chickpeas)
  • 50 ml oil
  • 4 g ginger and green chilli (chopped)
  • 1 g asafoetida
  • 10 g cloves
  • 10 g bay leaf
  • 10 g salt
  • 3 g sugar
  • Lemon juice (to taste)
  • 5 g garam masala powder
  • 5 g chopped coriander

Instructions:

  1. Sauté the Spices:

    • Heat oil in a pan and add cumin seeds, cloves, bay leaf, chopped ginger, and green chilli.
    • Sauté for about 2 minutes until fragrant.
  2. Cook the Chana:

    • Add the hara chana and cook on medium heat until done. Stir occasionally.
  3. Season and Finish:

    • Add salt, sugar, lemon juice, garam masala powder, and chopped coriander.
    • Mix well and cook for another 2 minutes.
  4. Serve:

    • Garnish with fresh coriander and serve hot.
