Kakdi Nu Raitu

- 2 tbsp coriander leaves, chopped
- 2 green chilies, finely chopped
- 2 medium cucumbers (kakdi)
- 1 tsp roasted cumin powder

- Begin by cleaning and grating the cucumbers for the raita base.
- Wash the cucumbers thoroughly and peel off the skin.
- Grate the cucumbers using a fine grater.
- Place the grated cucumber in a muslin cloth or clean cotton cloth.
- Gently squeeze out the excess water to prevent the raita from becoming watery.
- Set the grated cucumber aside.

Prepare the Yogurt Mixture
- Make the spiced yogurt base that forms the main body of the raita.
- In a mixing bowl, take the yogurt (curd) and whisk until smooth.
- Add salt, roasted cumin powder, chopped coriander leaves, and green chilies.
- Mix everything well to create a uniform, flavorful base.

- Mix the prepared ingredients and serve chilled for best flavor.
- Just before serving, add the grated cucumber to the yogurt mixture.
- Stir gently to combine without making it too runny.
- Taste and adjust salt or spice level as needed.
- Serve the Kakdi Nu Raitu chilled, garnished with a sprinkle of roasted cumin powder or a few coriander leaves on top.
