Karapodi
Karapodi is a fiery South Indian spice powder made with roasted curry leaves, chilies, and spices, offering a bold, aromatic flavor that enhances rice, idli, or dosa.
Ingredients
- 1 large bunch curry leaves
- 5 dry whole red chilies
- 1 tsp coriander seeds
- 1 tsp cumin seeds
- 5 cloves garlic
- 1 tsp tamarind pulp
- Salt to taste

Roast the Curry Leaves
- Heat a dry pan on medium flame.
- Add the curry leaves and dry roast them until they turn crisp and aromatic.
- Ensure they do not burn; remove them from the pan once done.

Roast the Spices and Chilies
- In the same pan, add the red chilies, coriander seeds, cumin seeds, and garlic cloves.
- Dry roast all ingredients together until they release their aroma and turn slightly golden.
- Keep stirring to avoid over-roasting.
- Remove from heat and allow the mixture to cool.

Grind and Season
- Transfer the roasted ingredients to a mixer jar.
- Add tamarind pulp and grind to a coarse or fine powder, depending on preference.
- Add salt to taste and mix well.
- Store the Karapodi in an airtight container. Enjoy Karapodi with steamed rice, idli, dosa, or even a drizzle of ghee for a spicy, aromatic twist.
