Carrot Muffin

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated carrots (about 2-3 medium carrots)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins or chopped dried cranberries (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cavities with cooking spray.
  2. Prepare the Dry Ingredients:

    • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt until well combined. Set aside.
  3. Prepare the Wet Ingredients:

    • In another mixing bowl, whisk together the granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth and well combined.
  4. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Do not overmix.
  5. Add Carrots and Mix-ins:

    • Gently fold in the grated carrots, chopped nuts (if using), and raisins or dried cranberries (if using) until evenly distributed throughout the batter.
  6. Fill Muffin Cups:

    • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 to 3/4 full.
  7. Bake:

    • Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Cool:

    • Remove the muffins from the oven and let them cool in the muffin tin for 5 minutes. Then transfer them to a wire rack to cool completely.
